I love Pancakes. I really, really do. But, on the contrary, gluten and I do not get along and I love animals.
So my mama came up with a delicious GF and Vegan pancake recipe that is too good not to share with you!

Puree in a blender:
1 cup almond milk
1 teaspoon apple cider vinegar (for Rising)
5 tablespoons “The neat egg” (Natural vegan egg substitute).
1/4 cup almond flour
1/2 cup coconut flour
1/2 cup tapioca flour
2 tablespoons coconut oil
2 tablespoons honey or 1 tablespoon Agave nectar
3/4 teaspoon baking soda
Directions:
Add a wee bit of coconut oil to a skillet pre-heated over low to medium heat.
Drop a dollop of batter onto the skillet
Look for the little baby bubbles start to form on the top and then flip it!
Fresh fruit on top with a drizzle of Organic Maple Syrup
Serves:
